When tasting it, you can perceive a fragrant note of blueberry juice followed by withered roses and traces of nutmeg. A dry and full-bodied wine, it has a fruity freshness with slight hints of cinnamon that with adequate tannin tames its alcohol content. It is a balanced and enjoyable wine, with a round and relaxed taste.

After maturing on its own lees in steel tanks, where it undergoes periodic bâtonnage, it ages for approximately 12 months in small oak barrels, a fundamental choice to round out the wine by smoothing its pronounced acidity.

Perfect with first courses based on rice, pasta and minestrone. The pronounced acidity of this wine pairs well with boiled meats. The mixed boiled meat cart is an absolute Piedmontese gastronomic specialty. Also try with stewed tripe.
