After maturing on its own lees in steel tanks, where it undergoes periodic bâtonnage, it ages for approximately 12 months in small oak barrels, a fundamental choice to round out the wine by smoothing its pronounced acidity.
Perfect with first courses based on rice, pasta and minestrone. The pronounced acidity of this wine pairs well with boiled meats. The mixed boiled meat cart is an absolute Piedmontese gastronomic specialty. Also try with stewed tripe.
