Winemaking occurs through gentle crushing, followed by fermentation at controlled temperature with constant bâtonnage in steel tanks. The second processing involves refermentation in autoclave using the Charmat (Martinotti) method.
Excellent as an aperitif accompanied by sweet and savory snacks. It pairs well with mollusks and shellfish. It can also be used as an important base for cocktails.
